I have an old Gretsch 12 6075 (I think. I didn't see any info in the guitars section for this model so I may be wrong) that does not have a serial number either on a label inside or on the back of the head stock. Is there a way to easily check somewhere on the pups or other electronics a date without ripping the guitar apart?
Best way of dating an old Gretsch without tearing it apart?

Nez, Pot codes can give you "some" information, but in the 60's Gretsch was purchasing these in such bulk that they aren't as useful as they are for dating 50's models. But at least an original pot code can establish the earliest the guitar could have possibly been produced.
