Easy adjustments, just like any humbucker you've ever seen. The small screws along the insides of the pickup rings (NOT at the corners) raise or lower the pickup.
No shimming required; shimming is for traditionally-mounted Filtertron-type pups, not what you have!
Individual polepiece screws in the 'buckers adjust for string-to-string balance.

The 5120/5122 have a unique pickup configuration compared to most Gretsch's. So, a lot of documentation on pickup setup doesn't directly apply. The gretschbuckers are standard humbucker sized and are suspended into the hollowbody cavity via their trim rings. This is what make these guitars so pickup mod friendly (literally thousands of pickups to choose from). TV Jones provides a pickup ring set that closely matches the authentic appearance of the filertron mounts (their EM2 mounts) ... but I getting off topic. Since a picture is worth a thousand words, here is a pic of the GFS pickups mounted in my 5120 using the stock trim rings and spacers. You may notice that they sit quite proud on the mounts, they are raised as high as the stock tapered springs will allow. The next string change I'll be relieving the spacers so the the pickup may be adjusted higher if need be. ... I hope this helps.
